- 2 c. sugar
- 1/2 c. water
- 1/2 c. light or dark corn syrup
- 2 egg whites
- 1/8 tsp. salt
- 1/2 tsp. vanilla extract
- 1/2 tsp. almond extract
- 25 walnut halves or pecans
Directions

1Combine sugar, water and syrup in saucepan.

2Heat, stirring, until sugar dissolves.

3Boil without stirring until syrup forms a hard ball in cold water (265° on candy thermometer).

4Remove from heat and quickly beat salted egg whites until stiff.

5Slowly add syrup to egg whites, beating constantly.

6Beat until candy thickens and begins to lose its gloss.

7Add flavorings and quickly shape with teaspoon into large pieces and drop onto a greased plate or waxed paper.

8Put half a nut on each piece.
