- 2 1/2 c. sugar
- 1 1/2 c. finely chopped pecans
- 2 egg whites, stiffly beaten
- 1/2 tsp. vanilla
- 1/2 c. water
- 1/2 c. light corn syrup
Directions

1Mix sugar, syrup and water in saucepan.

2Boil until a few drops placed in a cup of cold water forms a soft ball when rolled between the thumb and second finger (235° on a candy thermometer).

3Then pour half the boiling mixture over the stiffly beaten egg whites and stir.

4Return the remaining half of the mixture to the heat and boil until a few drops placed in a cup of cold water form a hard ball (260° on a candy thermometer).

5Combine with egg mixture.

6Add nuts and vanilla, working fast.

7Drop by rounded teaspoonfuls on a well buttered cookie sheet.
