Ingredients

  • 2 1/2 c. sugar
  • 1 1/2 c. finely chopped pecans
  • 2 egg whites, stiffly beaten
  • 1/2 tsp. vanilla
  • 1/2 c. water
  • 1/2 c. light corn syrup

Directions

    Mix sugar, syrup and water in saucepan.

    Boil until a few drops placed in a cup of cold water forms a soft ball when rolled between the thumb and second finger (235° on a candy thermometer).

    Then pour half the boiling mixture over the stiffly beaten egg whites and stir.

    Return the remaining half of the mixture to the heat and boil until a few drops placed in a cup of cold water form a hard ball (260° on a candy thermometer).

    Combine with egg mixture.

    Add nuts and vanilla, working fast.

    Drop by rounded teaspoonfuls on a well buttered cookie sheet.
