- 3 egg whites, room temperature
- 1/8 tsp. salt
- 1/3 Tbsp. cream of tartar
- 3 c. sugar
- 1/2 c. crystal syrup
- 1 c. water
Directions

1Cook sugar, salt and water until dissolved; add syrup and cook until soft ball stage.

2Add 1/2 to egg whites, beaten until stiff with cream of tartar.

3Continue beating while adding syrup.

4Cook remaining syrup to hard crack stage and add to egg white mixture. Add vanilla and nuts (optional).

5Beat until it begins to lose its gloss, then pour in pan and cut or drop on wax paper.
