  • 2/3 c. sugar
  • 1 c. cornstarch
  • 1 tsp. cinnamon
  • 2 c. miniature marshmallows
  • 1/2 tsp. nutmeg
  • 3/4 tsp. salt
  • 1 baked 9-inch pie shell
  • sweetened whipped cream (optional) or beat egg whites and bake in oven until nice and brown
  • 1 c. fresh prepared or canned 1/4 pumpkin
  • 2 c. milk
  • 2 egg yolks
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves

Directions

    Mix sugar, cornstarch, spices and salt together in heavy saucepan.

    Add pumpkin and milk; stir to blend well.

    Set over moderate heat and cook, stirring constantly, until thick and boiling.

    Beat egg yolks; add about half of the hot mixture gradually to egg yolks, stirring constantly.

    Return to pan and bring back to a boil, stirring constantly.

    Boil 1 minute.

    Remove from heat.

    Add marshmallows and stir until marshmallows are melted and mixture is blended.
