- 1 (2 1/2 to 3 lb.) broiler-fryer, cut up
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 c. all-purpose flour
- 1 tsp. red pepper
- 1 egg, slightly beaten
- 1/2 c. milk
- vegetable oil
Directions

1Season chicken with salt and pepper.

2Combine flour and red pepper; set aside.

3Combine egg and milk.

4Dip chicken in egg mixture and dredge in flour mixture, coating well.

5Heat 1-inch of vegetable oil in a skillet (350°).

6Place chicken in skillet. Cover and cook chicken over medium heat 20 to 25 minutes or until golden brown.

7Turn occasionally.

8Drain chicken on paper towels. Yields 4 servings.
