- medium size angel food cake (if using large cake, double the recipe)
- 6 egg yolks
- 1/2 tsp. grated lemon rind
- 1/2 c. lemon juice
- 3/4 c. sugar
- 1 pkg. Knox gelatine
- 1/4 c. cold water
- 6 egg whites
- 3/4 c. sugar
Directions

1Beat the 6 egg yolks until light; add grated lemon rind, lemon juice and sugar.

2Cook in double boiler, stirring constantly, until thickened.

3Soak gelatine in cold water.

4Add to custard and let cool.

5In a large bowl, beat the egg whites until stiff.

6Gradually add the sugar.
-
7Fold custard in.
