  • 1 c. flour
  • 1 c. whole wheat flour
  • 1/2 c. sugar
  • 2 Tbsp. wheat germ
  • 1 Tbsp. baking powder
  • 1/4 tsp. nutmeg
  • 1 c. finely chopped apples
  • 1/2 c. raisins
  • 1 c. apple juice
  • 1/3 c. oil
  • 1 egg, beaten

Directions

    Heat oven to 400°. Lightly spoon flour into measuring cup; level off. In large bowl, combine first 6 ingredients. Add apples and raisins. Stir in apple juice, oil and eggs until moistened. Spoon batter into muffin cups, filling 3/4 full.

    Bake for 20 to 25 minutes or until golden brown.

    Immediately remove from pans. Serve warm.
