  • 2 c. frozen pitted tart cherries
  • 1 c. frozen pitted dark sweet cherries
  • 1 tsp. lemon juice
  • 1/4 c. sugar
  • 1 1/2 Tbsp. cornstarch
  • 2 1/3 Tbsp. quick-cooking tapioca
  • pastry for 2-crust pie

    Preheat oven to 425°.

    Thaw cherries; drain, reserving juices. Mix sugar, tapioca and cornstarch in saucepan; add 2/3 cup reserved tart cherry juice and 1/3 cup reserved sweet cherry juice.

    Cook over high heat until thickened; cool.
