- 1 1/2 c. yellow cornmeal
- 1/2 c. flour
- 1 tsp. salt
- 4 tsp. baking powder
- 2 Tbsp. sugar
- 1 c. Cheddar cheese, grated
- 1 c. fresh corn
- 1/4 c. vegetable oil
- 1 c. milk (homogenized)
- 1 medium onion, diced
- 1 egg
- chopped jalapenos to taste
Directions

1Combine all dry ingredients with milk, egg and oil and mix well.

2Stir in remaining ingredients and bake in a well greased iron skillet at 350° until golden brown.

3Serve hot with ham hocks and greens and a glass of ice tea on the side.
