Ingredients

  • 1 1/2 c. yellow cornmeal
  • 1/2 c. flour
  • 1 tsp. salt
  • 4 tsp. baking powder
  • 2 Tbsp. sugar
  • 1 c. Cheddar cheese, grated
  • 1 c. fresh corn
  • 1/4 c. vegetable oil
  • 1 c. milk (homogenized)
  • 1 medium onion, diced
  • 1 egg
  • chopped jalapenos to taste

Directions

    Combine all dry ingredients with milk, egg and oil and mix well.

    Stir in remaining ingredients and bake in a well greased iron skillet at 350° until golden brown.

    Serve hot with ham hocks and greens and a glass of ice tea on the side.
