- 1 c. all-purpose flour
- 1 c. yellow corn meal
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/8 tsp. ground red pepper
- 1 c. milk
- 1/4 c. butter, melted
- 1 large egg
- 1 can corn, drained
Directions

1Preheat oven to 425°.

2Grease 12 muffin pan cups.

3In large bowl, combine flour, corn meal, sugar, baking powder, salt and red pepper.

4In medium bowl, whisk milk, butter and egg.

5Stir into dry ingredients just until combined.

6Stir in corn.
-
7Spoon into prepared pans.

8Bake 20 minutes.

9Unmold and serve warm.
