  • 1 cup butter, softened

  • 4 eggs
  • 2 tablespoons lemon zest

  • 2 cups cranberries (fresh or frozen)
  • 1 cup dried cranberries
  • 1 12 cups icing sugar
  • 2 12 teaspoons lemon juice

    Preheat oven to 350F Grease a 10-inch tube pan.

    Combine flour, baking powder and salt in a bowl.

    Beat butter and sugar until light and fluffy, about 2-3 minutes.

    Add eggs one at a time, beating well after each addition.

    Add lemon zest and vanilla extract.

    Add reserved flour mixture, alternating with milk in three additions, beginning and ending with the flour.

    Stir in cranberries.
