- 4 c. frozen coconut
- pastry for 2 crust pie
- 1 c. sugar
- 1 tsp. salt
- 1/2 c. light cream, evaporated milk or coconut milk
- 3 egg whites
Directions

1Thaw coconut.

2Line a 9-inch pie plate with pastry.

3Preheat oven to 400°.

4Combine sugar, coconut, salt and cream.

5Beat egg whites until stiff peaks form.

6Gently fold into coconut mixture. Spoon into prepared pie plate and cover with top crust.

7Brush lightly with milk or cream.

8Bake for 30 minutes.
