Double Garlic Soup

Ingredients
- 1 tablespoon olive oil
- 4 garlic cloves, finely chopped
- 1 leek, thinly sliced (white and light green part only)
- 3 potatoes, peeled and diced (yukon gold, if possible)
- 4 cups chicken stock
- salt and pepper
- 2 heads garlic, roasted
- 1/4 cup fresh chives, coarsely snipped
Directions

1Heat oil over medium-low heat. Cook the leeks and garlic until soft and fragrant. Do NOT brown.

2Add potatoes and chicken stock and bring to a boil. Lower heat and simmer gently until the potatoes are tender. This should take about 20 minutes.

3Remove 1 cup of soup and puree. Add back into soup. Season with salt and pepper. Squeeze in the roasted garlic and chives. Stir and serve.
