Double Red Pepper Hummus

  • 1 can (15 Oz. Size) Chickpeas, Juice Drained Into A Bowl
  • 1/2 cups Roasted Red Peppers
  • 1 Chipotle Pepper In Adobo Sauce
  • 1 whole Lemon, Juiced
  • 1/4 teaspoons Salt
  • 2 cloves Garlic, Smashed
  • 2 Tablespoons Tahini Paste
  • 1 Tablespoon Olive Oil
  • 13 cups Juice From Chickpea Can, Or As Needed

Directions

    In the food processor, add chickpeas, roasted red peppers, chipotle pepper, lemon juice, salt, garlic, and tahini.

    Give it a few pulses, then give it a whirl while streaming in the olive oil.

    Add as much chickpea juice back in as needed to reach desired consistency.

    Use a spatula to scrape down the sides and buzz until desired texture.

    Keep chilled and serve with veggies or pita chips.
