  • 8 oz dark chocolate, plus 2 ounces for topping
  • 4 eggs, separated,yolks and whites
  • 2 tbsp instant espresso granules

Directions

    Over a double boiler, melt 8 ounces of chocolate.

    Set aside to cool slightly.

    In a separate bowl, whisk egg yolks with espresso granules.

    Once incorporated, whisk into melted chocolate.

    Whisk egg whites separately until you form soft peaks.

    Then gently fold in chocolate mixture.

    Pour into individual cups.

    Coffee cups make a great presentation.

    Chill at least 2 hours before serving.

    Serve with whipped cream topping and shaved chocolate from reserved 2 ounces.
