- 8 oz dark chocolate, plus 2 ounces for topping
- 4 eggs, separated,yolks and whites
- 2 tbsp instant espresso granules
Directions

1Over a double boiler, melt 8 ounces of chocolate.

2Set aside to cool slightly.

3In a separate bowl, whisk egg yolks with espresso granules.

4Once incorporated, whisk into melted chocolate.

5Whisk egg whites separately until you form soft peaks.

6Then gently fold in chocolate mixture.

7Pour into individual cups.

8Coffee cups make a great presentation.

9Chill at least 2 hours before serving.

10Serve with whipped cream topping and shaved chocolate from reserved 2 ounces.
