- 2 lb. yellow summer squash, sliced thin (6 c.)
- 1/2 c. chopped onion
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 c. shredded carrots
- 1 (8 oz.) pkg. stuffing mix
- 1/2 c. melted butter
Directions

1Cook squash, onion and carrots in salted water for 10 minutes. Drain.

2Combine soup and sour cream.

3Stir in vegetables.

4Mix well.

5Melt butter and add stuffing mix.

6Spread 1/2 of crumbs in bottom of a 2-quart casserole dish.

7Spoon vegetables on top. Top with remaining crumbs.

8Bake at 350° for 25 to 30 minutes.
