Dried Fruit Pound Cake

- 100 g butter
- 60 g sugar
- 2 eggs, beaten
- 200 g flour
- 2 tsp baking powder
- 1 pinch salt
- 1 Tbsp lemon juice
- 100 g dried fruit
Directions

1Preheat the oven to 180C/350F.

2Put the butter and sugar into a bowl and mix together well until you get a creamy texture.

3Add the beaten eggs slowly into the bowl, and mix very well.

4Add the dried fruit, lemon juice and mix.

5Put in flour, baking powder and salt into a bowl and lightly mix together, but do not mix too much!

6A powdery mixture is fine.

7Spread olive oil or butter on the inside of the loaf pan, then pour in the mixture.

8Level out the surface of mixture a bit.

9Bake for about 30 min.

10Check whether it's cooked or not by pushing a stick into the centre.

11If nothing comes out with the stick, it's done.

12If it's not done, then bake for another 10 min.

13If surface is starting to get brown, cover over with aluminum foil to avoid over baking.
