- 2 c. cooked black-eyed peas
- salt and pepper to taste
- enough flour to batter the patties
- 1/4 tsp. sage
- dash of red pepper
- 1 egg
- 2 Tbsp. milk
Directions

1Cook peas until they are soft; mash peas.

2Mix mashed peas with salt and pepper, sage, red pepper, egg and milk (use milk if the mixture is dry).

3Add flour to mixture and form patties.

4Fry in about three tablespoons of oil or lard, browning on both sides.
