Ingredients
- 2 cups water
- 1 chicken breast
- 2 slices ginger, 1/8 inch thick
- 1 scallion
- 1 tablespoon salt
- 12 cup sherry wine
- cilantro (for garnish)
Directions

1Bring water to boil, then add chicken breast, ginger, scallion and salt.

2Boil 15 minutes.

3Remove to bowl.

4Debone chicken while warm.

5Remove ginger and scallion and discard.

6Place chicken and its stock in container.

7Add sherry.

8Cover and refrigerate 1-5 days.

9When ready to serve, cut chicken into 1-inch pieces.

10Arrange on platter.

11Pour jellied liquid over chicken and decorate with cilantro.

12Serve cold.
