Duck Ala Orange

  • 1 duck
  • 1 c. frozen orange juice (undiluted)
  • orange peel, grated
  • honey
  • orange slices
  • cooked wild rice
  • asparagus, cooked

Directions

    Wash duck and remove some of excess fat.

    Pat dry.

    Put duck in roasting pan with rack underneath.

    Set oven to 500°. Prick duck with fork around breast and legs.

    Put in oven for 5 to 10 minutes and hear crackling.

    Mix frozen orange juice, grated orange peel and honey to taste.

    Remove duck and drain fat; return to oven for more crackling and again drain fat.

    Reduce oven to 350°.

    Baste duck with orange/honey mixture with pastry brush. Cover and roast at 350° until done.

    Repeat orange sauce over duck; duck can also be stuffed.
