2Wash and pat dry breasts

3Score fat side of breasts

4Add salt and pepper

5Place on cold non-stick pan, then medium-high heat, fat side down.

6Leave for about 5-6 minutes. Plenty of fat will form. Allow fat to get golden brown

7Transfer to oven, skin side up

8Cook for about 10 minutes for a nice medium / rare; add 2-3 minutes for more well done
