Duck Soup

Ingredients

  • 1 large or 2 small ducks, cut into small pieces
  • 1 large onion, diced
  • 1 tsp. salt
  • 8 c. water
  • 2 stalks celery with leaves, chopped
  • 6 chicken bouillon cubes

Directions

    Place all in a large pot.

    Simmer gently for 2 or 3 hours. If too thick, add 1 cup water.

    Add 2 or 3 ounces of thin noodles. Cook very slowly 1/2 hour longer and serve.
