Ingredients

  • 2 1/2 c. sugar
  • 1/2 c. light corn syrup
  • 1/2 c. water
  • 1/4 tsp. salt
  • 2 egg whites
  • 1 tsp. vanilla
  • 1/2 c. finely chopped nuts

Directions

    Cook sugar, corn syrup, water and salt to 248°.

    Cover and boil for 3 minutes.

    Uncover and place thermometer in pan.

    Beat egg whites until stiff but not dry.
  5. 5
    When syrup is 248°, slowly pour about 1/2 of the syrup over the egg whites, beating constantly with the mixer.

    Cook remaining syrup to 272°.
