Dutch Lettuce Recipe

Ingredients

  • 1 pound lean salt pork, cut in 1/2 inch cubes
  • 8 lg. potatoes, peeled, boiled
  • 1 head lettuce, or possibly fresh leaf lettuce
  • 6 hard boiled Large eggs
  • 2 tbsp. cider vinegar
  • 1 c. water

Directions

    Boil potatoes; drain and mash coarse.

    Cut pork into 1/2 inch pcs, fry till crisp.
  3. 3
    Take out and put on cut up lettuce, add in cut up Large eggs and potatoes.

    In the pork drippings, drain off half the lard; add in water and vinegar to pan and bring to a boil.

    Pour over the lettuce, pork, Large eggs and potatoes.

    Mix together.

    More vinegar can be added if you like.
