  • 5 Large Red Potatoes, cubed & boiled
  • 4 Strips of Bacon, fried & chopped
  • 1 Small Yellow Onion
  • 11/4 Lbs. Cooked, Flaked Haddock
  • 1 Egg, Lightly Beaten
  • 1 Cup, Plain Bread Crumbs
  • 2 Tablespoons, grated Parmesan Cheese
  • 3 Cloves Garlic, Finely Diced
  • Sea Salt & Ground Black Pepper
  • 3 Tablespoons Of Canola Oil

Directions

    Mash Potatoes in a large glass bowl.

    Cook Bacon & Onion in oil.

    Add Bacon & Onion to Potatoes.

    Mix in the cooked Haddock.

    Mix in Beaten Egg, Salt & Pepper.

    Cover and Chill for 2 hours.

    Mix Parmesan Cheese and Bread Crumbs in shallow bowl.

    Press Fish Mixture into 6 round patties.

    Heat the oil over Medium-High heat.

    Fry the cakes for 1 to 2 minutes until golden brown
