- 2 1/2 - 5 lbs chicken
- 4 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 large onion, halved
- 1/2 teaspoon sage
- 1/2 cup water
Directions

1Preheat oven to 325°F.

2Remove giblets/neck from chicken cavities.

3Rinse chicken and pat dry.

4Rub softened butter all over chicken.

5Sprinkle outside of chicken with salt and pepper.

6Sprinkle 1/4 tsp salt and 1/2 tsp of sage inside the chicken.

7Place onion inside chicken.

8Place chicken in roasting pan breast side up.

9Add 1/2 cup water to pan.

10Loosely tent breast with aluminum foil.

11Cook for 25 minutes per pound.

12(3 lbs= approx 1 1/2 hours; 5 lbs= approx 2 1/2 hours).

13Remove chicken to a warm platter and let rest for 15 min to distribute the juices.
