- 2 c. Mozzarella cheese, shredded
- 15 oz. Ricotta cheese
- pastry dough for 2 crusts
- 1 small red bell pepper, quartered and thinly sliced
- 8 oz. precooked smoked ham, sliced in strips
- 1 tsp. olive oil
- 5 oz. frozen chopped spinach, thawed
- 1 tsp. dried basil leaves
- 3 eggs
- pepper
Directions

1Preheat oven to 375°.

2Roll out half of dough and line 9-inch buttered pie pan.

3Saute peppers and ham in oil 3 minutes; season with pepper.

4Whisk 2 eggs and Ricotta in large bowl.

5Spread mixture in pastry shell.

6Pat spinach dry.

7Sprinkle on top. Sprinkle saute mix over spinach and top with Mozzarella.

8Add basil.

9Roll out remaining dough and cover pie.

10Trim edges.

11Cut 4 vents and brush top with beaten egg.

12Bake 50 to 60 minutes or until golden brown.

13Set 20 minutes and serve.
