Easy Apricot Jam

Ingredients
- 16 oz. dried apricots
- 2 1/2 c. orange juice
- 3/4 c. sugar
- 1 Tbsp. lemon juice
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground ginger
Directions

1In a large kettle combine apricots, orange juice and sugar. Cover and simmer for 30 minutes.

2Mix in lemon juice, cinnamon and ginger.

3Remove from the heat and cool to room temperature.

4Puree in a food processor or blender until smooth.

5Spoon into jars or freezer containers, leaving 1/2-inch headspace.

6Top with lids. Refrigerate or freeze.

7Yields 4 cups.
