Easy Basic Corn Muffins

- 1 cup Flour
- 1 cup Corn Meal
- 2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 2/3 cups Sugar
- 2 whole Eggs
- 1 cup Milk
- 2 Tablespoons Molasses
- 1/2 sticks Butter
- 1/4 cups Whole Kernel Corn (optional)
- 1/4 cups Sour Cream Or Shredded Cheese (optional)
- 1/8 cups Chopped Mild Green Chilis (optional)
- 1/4 cups Bacon (optional)
Directions

1Add all of the dry ingredients into a mixing bowl (flour, corn meal, baking powder, salt, sugar)

2Then add eggs, milk, molasses, butter (oil can be substituted easily) and optional ingredients.

3Mix for two minutes by hand.

4Heat oven to 400 degrees (F).

5Fill muffin tins half full (this recipe will easily make 12 - 18 muffins)

6Bake for 12 minutes.

7Once done, remove from muffin tin and hide a couple from the kids and enjoy.

8OPTIONAL VARIATIONS -

9This recipe is easily adaptable. You can use oil instead of butter, add cheese and chilis or even corn and bacon.
