Easy Bbq Pulled Chicken

Ingredients

  • 1 medium onion, sliced
  • 2 tbsp olive oil, extra virgin
  • 2 garlic cloves, finely chopped
  • 300 grams leftover cooked chicken, shredded
  • 4 tbsp bbq sauce, your favourite
  • 3 tbsp Sriracha sauce
  • 1 1/2 tbsp apple cider vinegar
  • 3/4 tbsp firmly packed brown sugar
  • 4 tbsp ketchup
  • 1/2 tsp Chili sauce
  • 2 tbsp pickled jalapenos

Directions

    Heat the olive oil in a saucepan over medium heat.

    Add in the onion and garlic.

    Fry until the onion has softened.

    About 2-3 minutes.

    Add in the rest of the ingredients but not the chicken, reduce the heat to low and simmer for 15-20 minutes, stirring occasionally until the sauce has thickened and become syrup like.

    Add in the chicken and continue simmering for a further 5-10 minutes.

    Serve as you please.
