Ingredients

  • 1 loaf Store bought sliced bread
  • 1 dozen large eggs
  • 1 kg shoulder bacon in strips
  • 1/4 lb butter salted or unsalted
  • 1 salt
  • 1 pepper
  • 1 can creamcorn (optional)

Directions

    Preheat oven to 180F celcius and greese large muffin trays well.

    Butter sliced bread and slightly cut each side of the bread to allow a nice fit in the muffin tray.

    Wrap uncooked bacon strips inside the bread.

    (almost lining the sliced bread).

    Add a tablespoon of your choice of cream corn at the bottom inside the bread in each cup.

    (this step is optional)

    Crack open one egg sunny side up into each muffin cup to complete the breakfast basket.

    Add salt and pepper to taste.

    Then put in oven until eggs are cooked and bacon crispy (about 15-18 minutes).
