Easy Brunch Casserole

- 2 c. shredded Longhorn cheese
- 1 pkg. croutons (I use seasoned)
- 2 lb. breakfast sausage, browned and well drained
- 6 eggs
- 3/4 tsp. mustard
- 2 1/2 c. milk
- 1 can mushroom soup
- 1 small can mushrooms (optional)
Directions

1Place croutons in greased 9 x 13-inch metal pan.

2Put grated cheese over croutons.

3Brown sausage and place on top of cheese. Beat eggs and mix with soup, mustard, milk and mushrooms.

4Pour over sausage.

5Bake, covered, with foil in 300°

6oven for 1 1/2 hours.

7This recipe may be prepared the night before and refrigerated.

8Serves 10.
