- 64 oz. vanilla flavored low-fat yogurt
- 4 Tbsp. sugar
- 2 Tbsp. cornstarch
- 2 Tbsp. lemon juice
- 2 tsp. vanilla
- 4 eggs worth of egg substitute
Directions

1Day Before:

2Drain yogurt to make cheese (see following). Preheat oven to 325°.

3Lightly grease an 8-inch pie pan or a 7-inch spring-form pan.

4Place yogurt cheese in a medium size bowl.

5Add sugar, cornstarch, lemon juice and vanilla.

6Mix with wire whisk until well blended.

7Stir in egg substitute.

8Pour into prepared pan and smooth top with spatula.

9Bake until center is set, 20 to 25 minutes for pie pan, 45 to 55 minutes for spring-form.

10Chill in fridge.
