  • 1 lb. lean ground beef (85%)
  • 1/3 cup cholesterol-free egg product
  • 2/3 cup medium salsa, divided
  • 2/3 cup plain dry bread crumbs
  • 1/4 cup diced green chiles or jalapeno peppers

Directions

    Mix ground beef, egg substitute, 1/3 cup salsa, bread crumbs, chiles or jalapenos.

    Shape into a 6 x 3-inch loaf.

    Place in lightly greased baking pan.

    Bake at 350F for 50 minutes.

    Pour remaining 1/3 cup salsa over meatloaf.

    Bake for 10 minutes more.

    Let stand 10 minutes before slicing.

    Garnish as desired.
