- 2 lb. pkg. frozen hash browns, partly thawed
- 1 pt. sour cream
- 2 c. shredded Colby
- 1 c. shredded Monterey Jack
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 2 oz. jar drained pimentos
- 1 Tbsp. instant chicken bouillon
Directions

1Combine all ingredients except 1/2 cup Colby in large bowl, mixing well.

2Turn into 9 x 13-inch baking dish, buttered.

3Bake at 350° for 55 to 60 minutes until potatoes are tender.

4Top with remaining Colby.

5Let melt over casserole.
