  • 2 lb. pkg. frozen hash browns, partly thawed
  • 1 pt. sour cream
  • 2 c. shredded Colby
  • 1 c. shredded Monterey Jack
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 2 oz. jar drained pimentos
  • 1 Tbsp. instant chicken bouillon

Directions

    Combine all ingredients except 1/2 cup Colby in large bowl, mixing well.

    Turn into 9 x 13-inch baking dish, buttered.

    Bake at 350° for 55 to 60 minutes until potatoes are tender.

    Top with remaining Colby.

    Let melt over casserole.
