Easy Chicken Cordon Bleu

  • 4 whole boneless, skinless chicken breasts
  • 4 slices cheese (Swiss or Mozzarella)
  • 4 thin slices country ham
  • 4 Tbsp. butter
  • 1/2 c. seasoned Italian bread crumbs

    Pound chicken with mallet to flatten.

    Place one slice of cheese and 1 slice of ham on each whole chicken breast.

    Fold breast in half and secure with toothpick.

    Coat each chicken bundle with bread crumbs.

    Melt butter in pan.

    Place chicken in pan and cook for 1 hour at 350°.

    Turn once.

    Baste occasionally.
