- 2 chicken carcasses
- 1 carrot, chopped
- 1 onion, peeled and chopped
- 1 celery rib, chopped
- 3 parsley sprigs
- 1 sprig fresh thyme
- 1 bay leaf
- water, to cover
Directions

1Thoroughly wash carcasses in cold running water.

2Place the carcasses in a large saucepan, cover with water and bring to the boil.

3(Remove scum as it rises).

4When the stock boils, reduce heat.

5Add vegetables and herbs.

6Simmer for 2-3 hours.

7Allow to cool.

8Strain.
