Easy Clam Chowder

  • 1 Homemade Gourmet Baked Potato Soup Mix
  • 8 oz. Half and half
  • 2 6.5 oz cans chopped clams, drained and liquid reserved
  • 1 or 2 medium sized baked (or canned) potatoes, chopped

Directions

    Pour the reserved liquid from the drained clams into a 4 cup measure. Add water to make the total liquid equal to 4 cups. Prepare the Baked Potato Soup mix using the 8 oz. Half and half and 4 cups of liquid, following heating instructions on the soup mix label. When soup is ready, add the clams and diced potato and simmer 5 minutes longer. Serve hot.

    Option: For a milder clam flavor, use only 1 can of clams. If desired, when turning soup to simmer, add 2 TBS. Onion, minced for a different flavor.
