  • 3 tablespoons olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • 1 (14 ounce) canitalian peeled tomatoes, drained and chopped
  • 2 cups water
  • 1 cup bottled clam juice
  • 2 large red potatoes, peeled and cut in 1 inch cubes
  • 1 teaspoon dried oregano
  • 2 (6 1/2 ounce) canschopped clams
  • 1 pinch cayenne

Directions

    In saucepan, heat oil over medium heat.

    Saute onion and garlic until softened.

    Add tomatoes, water and clam juice.

    Bring to a boil.

    Add potatoes and oregano.

    Cover and cook 20 minutes or until potatoes are tender.

    Add clams and heat through, about 1 minute.

    Season to taste with cayenne.
