- 2 tablespoons cornstarch
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon
- Pinch salt
- 2 cups whole milk
- 1 tablespoon instant espresso powder
- 1 teaspoon vanilla extract
Directions

1Whisk the cornstarch, sugar, cinnamon and salt in a 2-quart heavy saucepan.

2Gradually whisk in the milk.

3Boil the mixture over medium-high heat, whisking constantly, about 2 minutes.

4The mixture will be thick when done.

5Remove the saucepan from the heat.

6Whisk in the espresso and vanilla until smooth.

7Transfer the mixture to a bowl and cover with plastic wrap.

8Chill the bowl in the fridge until cold, at least 2 hours.
