  • 2 1/2 c. sugar
  • 1/2 c. light corn syrup
  • 1/2 c. water
  • 1/4 tsp. salt
  • 2 large egg whites
  • 1 tsp. vanilla
  • 1 c. coarsely chopped walnuts or pecans

    In a 2-quart saucepan, stir together the sugar, corn syrup, water and salt.

    Cook over medium heat stirring constantly until mixture comes to a boil.

    Reduce heat.

    Cook without stirring until temperature reaches 265° on a candy thermometer or until a small amount of syrup dropped into very cold water forms a ball that is hard enough to hold shape, yet plastic.
