Ingredients
- 2 c. flour
- 3 egg yolks
- 1 egg
- 2 tsp. salt
- 1/4 to 1/2 c. water
Directions

1Measure flour and salt in bowl.

2Add egg and extra yolks; mix thoroughly.

3Add water 1 to 2 tablespoons at a time mixing well. Form dough into a ball.

4Knead until elastic and smooth.

5Cover and let set 10 minutes.

6Divide dough into 4 parts.

7Roll one at a time on well floured pastry sheet about 1/8-inch thick.

8Cut into thin or thick (whichever you prefer) strips with a pizza cutter.

9Shake off extra flour and place on towel or sheet pan to dry for several hours or overnight.

10Cook in 3 quarts water or use chicken broth 12 to 15 minutes until tender.

11Makes 6 cups.
