Easy Eggplant Casserole

- 1 eggplant
- 1 very small onion, chopped
- 1 c. grated cheese
- 4 slices bread, crumbled
- 4 eggs, separated
Directions

1Peel and cut up eggplant.

2Cook in small amount of water until tender, but not mushy; drain water.

3Cook small amount of onion in margarine until tender.

4Combine with eggplant, cheese and bread. Divide 4 eggs and combine yolks with rest of mixture.

5Whip whites until stiff.

6Fold into mixture.

7Bake 35 minutes at 360° in a greased pan.
