- 1 lb. ground beef
- 1/4 to 1/2 c. chopped onion
- 1/4 c. celery or green pepper
- 1 small jar Ragu spaghetti sauce
- 1/2 c. water
- 1 small eggplant, peeled and sliced thinly
- 4 oz. Mozzarella cheese
Directions

1Brown beef, onions, celery or green pepper.

2Drain off fat. Add liquids.

3Add thinly sliced eggplant and simmer uncovered in skillet 15 minutes or until eggplant is tender.

4Add cheese to top and simmer until melted.

5Serve plain or over noodles.

6This mixture is even better as a leftover placed inside a pita pocket. Add more cheese to the top and melt in oven.
