- 1 tablespoon oil
- 1 onion, chopped
- 1 lb ground beef
- 10 34 ounces condensed tomato soup
- 10 ounces enchilada sauce
- 8 medium flour tortillas
- 2 cups cheddar cheese, shredded
Directions

1Heat oil in a large pan and add onions.

2Cook until soft.

3Add ground beef and cook over medium heat until meat is browned, stirring until meat crumbles; drain and return to skillet.

4Stir in tomato soup and enchilada sauce.

5Mix well and bring to a simmer.

6Spread about 1/4 cup meat mixture on each tortilla; sprinkle tortillas evenly with 1 cup cheese.

7Roll up, and place, seam side down, in a 9x13-inch baking dish.

8Pour remaining meat mixture over tortillas.

9Cover and bake at 350 degrees for 20 minutes.

10Uncover and sprinkle with remaining cheese.

11Bake an additional 5 minutes or until cheese melts.
