Easy Garden Quinoa

  • 1 cup quinoa uncooked
  • 2 cups vegetable stock low sodium
  • 1 1/2 tablespoons vegetable oil or canola oil
  • 1/2 cup yellow onion chopped
  • 1 small carrots peeled and finely chopped
  • 1 clove garlic minced
  • 1 pinch seasoning, Mrs Dash or your favorite seasoning blend
  • 1 tablespoon italian parsley fresh, chopped

Directions

    Rinse and drain the quinoa in cold water 3 times; set aside.

    In a medium saucepan, heat oil.

    Add the onion, carrot and garlic.

    Saute for 2 minutes.

    Add the rinsed and drained quinoa and stir to coat with the vegetables; saute 1 minute.

    Add the vegetable stock and bring to a boil.

    Cover, reduce heat to low and simmer for 20 minutes.

    Remove from heat and add the seasoning mix and chopped parsley.

    Serve hot or at room temperature.

    NOTE: Looks great if you mold the quinoa in a ramekin and garnish with fresh parsley sprigs.
