Ingredients

  • 1/2 cup Land O Lakes Butter, softened
  • 1/2 cup firmly packed brown sugar
  • 1 (3.5-ounce) package cook & serve butterscotch-flavored pudding and pie filling mix
  • 1 Land O Lakes Egg
  • 1 2/3 cups all-purpose flour
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • Mini candy-coated chocolate pieces, candy buttons, chocolate chips, raisins, red cinnamon candies, etc.
  • White decorator icing or gel

Directions

    Heat oven to 350F.

    Combine butter, brown sugar and pudding mix in bowl; beat at medium speed until creamy.

    Add egg; continue beating until well mixed.

    Add flour, ginger, cinnamon and baking soda; beat at low speed, scraping bowl often, until well mixed.

    Roll out dough, one-half at a time (keeping remaining dough refrigerated), on lightly floured surface to 1/4-inch thickness.

    Cut with 3-inch gingerbread boy cookie cutter.

    Place 1 inch apart onto large ungreased cookie sheets.

    Add decorations for eyes, mouth and buttons as desired; press slightly into dough.

    Bake 9-12 minutes or until edges are lightly browned.

    Remove to cooling rack.

    Cool completely.

    Pipe edge of each cookie with white decorator icing, if desired.
