Easy Lasagna

  • 1 qt. spaghetti sauce
  • 1 lb. Italian sausage or 1 lb. hamburger and 1/2 tsp. fennel
  • 8 oz. Mozzarella, shredded
  • 1 1/2 c. Ricotta or cottage cheese
  • 2 eggs or equivalent egg substitute
  • 3 oz. chopped spinach
  • lasagna noodles (dry)
  • 1/2 tsp. Italian or pizza seasoning
  • 1/4 tsp. dried red pepper (optional)
  • 1 c. water

Directions

    Fry the sausage or beef to medium.

    Remove grease and add spaghetti sauce.

    Remove from heat.

    While the meat cooks, combine Ricotta, spinach and eggs in a food processor and process until spinach is not larger than 1/2-inch leaves.
