- 4 eggs
- 1 Tbsp. cornmeal
- 1 Tbsp. flour
- 1/4 c. milk
- 1 c. sugar
- pinch of salt
- 1/4 c. melted butter or oleo
- 1/4 c. lemon juice
- 1 Tbsp. grated lemon rind
Directions

1Mix 1 cup sugar, flour and cornmeal.

2Stir.

3Add melted butter or oleo, freshly squeezed lemon juice and grated lemon rind.

4Beat whole eggs well.

5Add milk and salt; stir well.

6Pour in pie crust. Bake at 425° for 3 minutes; then bake at 350° for 20 to 25 minutes. Cook until firm when shaken or test with knife until it comes out clean.
