  • 4 eggs
  • 1 Tbsp. cornmeal
  • 1 Tbsp. flour
  • 1/4 c. milk
  • 1 c. sugar
  • pinch of salt
  • 1/4 c. melted butter or oleo
  • 1/4 c. lemon juice
  • 1 Tbsp. grated lemon rind

    Mix 1 cup sugar, flour and cornmeal.

    Stir.

    Add melted butter or oleo, freshly squeezed lemon juice and grated lemon rind.

    Beat whole eggs well.

    Add milk and salt; stir well.

    Pour in pie crust. Bake at 425° for 3 minutes; then bake at 350° for 20 to 25 minutes. Cook until firm when shaken or test with knife until it comes out clean.
