- 1 large sweet red pepper
- 1 large onion, chopped (1 c.)
- 1 1/2 lb. ground beef
- 2 c. bread crumbs
- 1/2 lb. Cheddar cheese, cut into 1/2-inch cubes
- 1 Tbsp. margarine
- 2 Tbsp. shortening
- 1 tsp. salt
- 1/2 tsp. celery salt
- 1/2 tsp. paprika
- 1/4 tsp. pepper
- 2 eggs
- 1 c. milk
Directions

1Cut stem end from red pepper; remove seeds.

2Slice center part into 8 thin rings for topping; chop remaining to make about 1/2 cup.

3Saute pepper and onion in shortening, stirring often, for 5 minutes or until soft.

4Combine beef, bread crumbs, spices, eggs and milk in large bowl; blend in sauteed mixture, then fold in cheese cubes.

5Pack lightly into a 6-cup casserole; turn out into a greased shallow pan.

6Score top in crisscross pattern with knife.

7Bake in moderate oven at 350° for 1 hour.

8Saute saved red pepper rings in margarine, turning once, just until slightly wilted.

9Arrange on top of loaf.
